The extra virgin olive oil (EVO) of the Fregoli Farm is produced using the olive trees of the farm, amounting to approximately 6 ha (14 ac) of the typical Tuscan cultivars, consisting of 50% Frantoio, 30% Leccino and 20% Moraiolo olives. The particular weather conditions, the altitude (490 mt/1,607 ft, which is the survival limit for many parasites of the olive tree), the exposure, the type of stony, clayey and calcareous soil contribute to the uniqueness of this product.
Thanks to the early harvesting at the beginning of October (by hand picking) we are able to select the best olives. If, on the one hand, this results in a lower yield, on the other hand it guarantees a product with a high quantity of polyphenols and a low acidity.
The milling takes place in our mill, equipped with Pieralisi’s state-of-the-art machines within 12 hours from the harvesting. Thanks to the cold extraction, the temperature is kept below 27 °C (80.6 °F) to obtain a high-quality product with a strongly marked peculiarity.
All this contributes to the creation of an intense product, whose organoleptic examination is balanced on the palate and long lasting, with slightly spicy and bitter notes of artichoke, whereas the nose perceive an intense and fruity bouquet of fresh grass, without fault.
To enhance its flavor, it should be consumed raw with first courses, meats and side dishes.
